Pasta noodles with premium cheddar cheese sauce for The New Modern Mediterranean Diet

Cookware and Utensils: 5 qt. pot, 1.5 qt. pot, 10-inch sauté pan, whisk, chef's knife, measuring cups and spoons, cutting board, wide spatula, scale

Ingredients:

  • 454 g (16 oz.) Spaghetti, durum wheat

  • 227 g (8 oz.) Tello Medium Cheddar cheese block diced

  • 50 g butter (1/4 cup), diced

  • 50 g white flour, unbleached (1/4 cup)

  • 2 cups whole milk

  • 1 tsp salt and pepper mix

  • 1/2 tsp paprika

  • 1 tsp salt (for the pasta water)

Directions:

  1. Fill the large pot with cold water and bring it to a boil over medium-high heat.

  2. Heat the medium pot (1.5 qt.) on medium-low heat for 1 minute.

  3. Add the butter to the medium pot and let it melt.

  4. Add the flour to the melted butter and mix well with a spatula until incorporated.

  5. Pour in the cold milk and bring to a boil over medium heat, stirring constantly and scraping the bottom of the pot.

  6. Add the salt, pepper, and paprika, then remove the pot from the heat.

  7. Add the cheddar cheese and stir until the cheese melts and the sauce becomes creamy.

  8. When the water for the pasta is boiling, add salt and the pasta noodles. Cook the pasta according to the package directions (8–9 minutes). When ready, drain the pasta but do not rinse it. Keep some pasta water on the side.

  9. In a large bowl, combine the cooked pasta and cheese sauce. Stir well and let it sit for 2 minutes to allow the pasta to absorb the sauce. If the pasta becomes too thick, incorporate some pasta water to achieve the desired consistency.

  10. Serve family-style and enjoy!

Chef notes: Use stainless steel pots. Cook the pasta al dente, remembering that it will continue to cook as you serve it on the plate. When purchasing quality pasta products made with 100% durum semolina, check the ingredient label. Use premium cheddar cheese from a reliable, healthy source. You can substitute milk with unsweetened non-dairy products, such as soy milk. Cheddar cheese can be substituted with Colby Jack or similar cheeses. You can store the pasta for 5 days or freeze it for up to 30 days. Have fun cooking!
